The premium quality pans that I have suggested have the aluminum encased around stainless steel. This is so the quick heating can be obtained but with no danger of leakage. Some of the pans suggested offer nonstick surfaces that are not coatings but are many nonstick by the quality of manufacture often having etched and shiny surfaces. This is a good reason why one needs to buy quality cook ware and not settle for cheap frying pans etc. that can become serious issues.

I have a stainless steel pot set which includes frying pans and I love to cook with them. I don’t have any copper cook ware. But I have notice that you mentioned copper reacts with acid but I have learned in chemistry that copper is non-reactive to acid because of it position in the metal series , so this is a bit strange to me. I know Aluminium reacts with acids. I have had aluminum non stick frying pan in the past work just fine.
If you buy quality items and take care of them, they will last a long time. Properly made copper nonstick fry pans are great if they are taken care of and treated well. The coating will protect the pan and separate it from the food.
